Technically a dumpling, gnocchi is found throughout Italy. Relatively new compared to other forms of pasta, gnocchi is typically made of potato and flour. Extremely versatile, each region in Italy has a different preparation method, from pesto to brown butter to ragù.
Fresh gnocchi is also a great pasta for flavors such as pumpkin, sweet potato, and spinach.
