Tagliatelle Al Limone
This vibrant lemony recipe is perfect for summer and utilizes our fresh Tagliatelle. Great in a pinch, it contains only staple ingredients and is ready in under 10 minutes. To take it up a notch, use some of our flavored pasta (basil works great) and garnish with some fresh thyme.

Cook: 5 min
1 9oz bag fresh tagliatelle pasta
3 tbsp butter
1 tsp olive oil
juice & zest of 1 lemon (preferably organic or well-scrubbed)
heavy cream, optional (to cut acidity to your taste)
Thyme
1/2 cup pasta water (as needed)
Salt & Pepper to taste
- While the water boils, melt butter in a saute pan with the olive oil and lemon zest over low heat, stirring to combine.
- Strain in lemon juice to prevent seeds and pulp entering the sauce, stirring to emulsify into a light sauce. Season to taste with salt & pepper. If it is too acidic, add a splash of heavy cream.
- Cook fresh tagliatelle for 2-3 min, then immediately drain and add to lemon sauce, making sure to reserve a ladle-full of pasta water.
- Stir well to combine and coat the pasta in the sauce, adding a bit of the pasta water if the sauce is too thin (it will thicken as it cools). Season to taste.
- Plate in a bowl and serve with thyme leaves and Parmesan grated to your heart's content.
